Year Round Offering: Sunshot

Founded in 1961 in Três Pontas, Cocatrel has grown into the second-largest coffee cooperative in Brazil, supporting over 6,000 producer members across the region. More than half of its members farm on less than 10 hectares, highlighting its strong support for small-scale producers. Coffee deliveries are fully traceable, with each lot electronically recorded and assigned a unique QR code, allowing growers to track their coffee throughout the supply chain.

Falcon Specialty works closely with Cocatrel Direct Trade, a dedicated branch focused on sourcing and promoting the highest-quality coffees from cooperative members. Caixa de Fruta, meaning “Box of Fruits,” is a profile-based blend primarily sourced from the Carmo de Cachoeira area. Selected for its red fruit and creamy milk chocolate character, the coffee must score 83 points or higher. All coffees in the blend are dried in static drying boxes, a controlled method that enhances fruity, expressive flavour profiles beyond traditional Brazilian natural coffees. Caixa de Fruta consists mainly from blends components of 5 distinct farmholders.

 

 

Fazenda Rancho Grande
Coffee production at Rancho Grande Farm began in 1933, when Mr. Aneite Reis inherited five hectares of land and started cultivating coffee. Today, the farm is managed by José Carlos Reis and his son Flávio “Fafa” Reis, continuing a proud family tradition. Their mission is to produce high-quality coffee while protecting the environment and supporting employee welfare. The farm provides housing, subsidised electricity, and food for its workers. Rancho Grande is open to innovation, investing in static drying boxes that carefully control fermentation and drying, resulting in cleaner, fruit-forward flavour profiles that elevate Brazilian natural coffees for the specialty market.

 

Fazenda Zaroca
Zaroca Farm represents the revival of a century-old coffee legacy led by Gilberto Basilios and his brother Berto. Originally founded by their grandfather, the farm fell into decline until Gilberto returned in 2015. Since then, they have replanted large areas with high-performing varietals such as Mundo Novo, Catuai, and Yellow Bourbon, while also experimenting with new cultivars. Located in Sul de Minas at 1,150 metres above sea level, Zaroca produces around 6,000 bags annually. Through careful harvesting, density separation, and the use of static drying boxes, the farm achieves refined flavour profiles with vibrant acidity and balance.

Fazenda Morro Grande
Fazenda Pião Morro Grande, meaning “Cowboy Mountain,” is situated between 950 and 1,150 metres above sea level and spans 74 hectares. The farm is run by brothers Rafael and Leo Carvalho Lima, the third generation of their family to work the land. Originally focused on dairy farming, the property gradually transitioned to coffee production in the late 1990s. With Leo’s background in agronomy, coffee quality improved significantly. Today, around half the farm is dedicated to coffee, producing approximately 2,200 bags annually. Processing is done on-site using patios and guardiolas to ensure consistency and quality.

 

Fazenda Mutuca
Fazenda Mutuca is a historic family-owned coffee farm located in the South of Minas region, at the base of Serra de Três Pontas. Managed by Geraldo and Maria Theresa since 1959, the 365-hectare property dedicates 211 hectares to coffee cultivation. Elevations range from 900 to 1,100 metres, and 32% of the land is preserved as native forest. The farm blends traditional practices with modern sustainable techniques, including biological pest control and soil regeneration. Growing a diverse range of varietals, Fazenda Mutuca consistently produces specialty coffees, with most lots scoring above 82 points.

Fazenda Londrina Naimeg
The Naimeg family’s coffee journey began in the 1960s under the leadership of Gerson Naimeg, who founded the family business after acquiring land in Paraná. Following devastating frosts, the family relocated their coffee production to Minas Gerais, establishing Fazenda Pântano in Coromandel. Today, the family manages several farms, including Londrina, which spans 394 hectares with 190 hectares planted with coffee. The farms cultivate a wide range of varietals such as Catuai, Mundo Novo, and Paraiso. United across generations, the Naimeg family continues to honour its legacy through quality-driven and carefully managed coffee production.

 

 

About our series

At Lot One, our roasting philosophy begins with focus. Instead of offering a broad selection, we deliberately release only one coffee at a time. This allows us to fully immerse ourselves in a single origin, harvest, and flavour profile. By limiting choice, we create space for depth, precision, and care. Every roast becomes the result of attention rather than compromise, shaped by curiosity and respect for the coffee itself.

Our roasting approach follows the same mindset. We work with four distinct roast levels, but we avoid traditional labels such as filter, omni, or espresso. These categories can feel restrictive and suggest that a coffee belongs to only one brew method. We believe flavour is more fluid than that. Our roast profiles are meant to offer direction rather than rules, encouraging exploration across different brewing styles.

Nordburn is our lightest roast and the purest expression of the coffee’s origin. With a weight loss between 11 and 12%, this profile preserves brightness, acidity, and delicate aromatics. Expect clarity, precision, and a lively cup that rewards attention to detail. Nordburn works beautifully for those who enjoy nuance and are comfortable dialing in their brew.

Rumjack sits at the intersection of clarity and comfort, with a weight loss of around 13%. This roast level brings balance: sweetness becomes more pronounced, acidity softens slightly, and structure gains definition. Rumjack is versatile and approachable without losing character. It offers enough flexibility for experimentation while remaining reliable, making it a natural starting point for many brewers.

Smooth Operator leans into roundness and body. At roughly 14% weight loss, this profile develops deeper sweetness, softer edges, and a fuller mouthfeel. Flavours become more cohesive and comforting, with less emphasis on sharp acidity. Smooth Operator is forgiving and expressive, ideal for those who value texture, warmth, and consistency across different brewing methods.

Back In Black is our most intense roast level, reaching approximately 15-16% weight loss. This profile delivers more depth, with a more pronounced roast character. Acidity steps back in favour of richness and power.


Sunshot is our all year round coffee: a dependable staple with a vibrant personality. Designed to shine in espresso, Sunshot is always roasted to around 15% weight loss. This slightly more developed roast makes extraction easier and more consistent, while still preserving the distinctive character of the coffee itself. The result is an espresso that is balanced, expressive, and forgiving to work with, whether you are dialing in at home or behind a busy bar.
