At Lot One, our roasting philosophy begins with focus. Instead of offering a broad selection, we deliberately release only one coffee at a time. This allows us to fully immerse ourselves in a single origin, harvest, and flavour profile. By limiting choice, we create space for depth, precision, and care. Every roast becomes the result of attention rather than compromise, shaped by curiosity and respect for the coffee itself.
Our roasting approach follows the same mindset. We work with four distinct roast levels, but we avoid traditional labels such as filter, omni, or espresso. These categories can feel restrictive and suggest that a coffee belongs to only one brew method. We believe flavour is more fluid than that. Our roast profiles are meant to offer direction rather than rules, encouraging exploration across different brewing styles.
Choosing a roast level at Lot One is a personal decision. It depends on your taste preferences, your trust in your equipment, and your confidence as a barista. From light to more intense, our four roast levels are Nordburn, Rumjack, Smooth Operator, and Back In Black. Nordburn is our lightest roast, bright and precise, highlighting acidity and origin character with a weight loss of 11–12%. Rumjack sits around 13% weight loss and balances clarity with sweetness and structure. Smooth Operator, at roughly 14%, leans into roundness, body, and comfort. Back In Black is our most intense profile, with about 15-16% weight loss, offering more depth and a fuller mouthfeel.
For those who prefer a bit more guidance, Rumjack often works well for filter brewing, while Back In Black is a familiar choice for espresso. Still, these are merely reference points. They are not absolute truths, but starting lines.
