In our search for strong and reliable partners within the specialty coffee scene, we were introduced to CDS Automaten, the official distributor of Eversys machines in Belgium and a highly skilled service partner. To better understand these machines and the philosophy behind them, we visited their facilities and had the opportunity to take a closer look at the technology in practice. What quickly became clear is that when discussing the introduction of super automatic espresso machines into the specialty coffee world, one name inevitably stands out: Eversys.
While the brand provides extensive marketing material highlighting performance and innovation, from my personal perspective there are three elements that truly define why they became pioneers in this space.
The first aspect that clearly sets Eversys apart is the modular construction of their machines. Every key component — grinders, brew groups, milk systems, boilers, and other internal modules — is designed to be easily removed and replaced.
In practice, this means that when a technical issue occurs, the technician does not repair the machine on-site. Instead, the faulty module is removed and immediately swapped with a functioning one. The defective part is then repaired in the workshop rather than in the coffee bar itself. This drastically reduces downtime.
For busy specialty coffee shops, where workflow and consistency are critical, this system is revolutionary. Service interventions become incredibly fast, predictable, and efficient. Rather than waiting hours (or even days) for a technician to diagnose and repair a machine on location, cafés can resume operations almost instantly. This modular philosophy reflects a deep understanding of real-world hospitality environments where every minute counts.
The second defining characteristic is Eversys’ relentless technological pursuit of espresso extraction optimization.
Long before burr rotation speed became a widely discussed topic in specialty coffee circles, Eversys had already identified its impact on particle size distribution. By adjusting the rotational speed of the grinding discs, they were able to influence the size and uniformity of coffee particles. Faster or slower burr speeds directly affect how the coffee fractures, which in turn impacts extraction dynamics, clarity, and balance in the cup.
This level of control over grinding variables shows how seriously they approach extraction science. They were not simply automating espresso production; they were engineering it.
Another impressive feature is the shaking movement of the brew group during grinding. This motion ensures even distribution of coffee inside the brewing chamber. In a traditional manual setup, a barista must distribute the coffee grounds carefully before tamping to avoid channeling. Eversys integrated this step into the machine itself, replicating an essential barista technique through mechanical precision.
Additionally, Eversys machines are among the few super automatics capable of achieving very slow flow rates — a crucial element for producing high-quality espresso. Slow flow allows for better control of extraction, particularly when working with lighter roasted specialty coffees that require precision and longer contact times. Many automatic machines struggle to achieve this level of finesse, but Eversys deliberately engineered for it.
The third major strength lies in their machine portfolio. Eversys offers a broad range of configurations that allow cafés to choose how they balance workflow efficiency and manual control.
At one end of the spectrum is the Shotmaster series — espresso-only machines focused purely on delivering high-quality shots at scale. On the other end are fully automated systems capable of producing complete milk-based beverages directly into the cup, with options ranging from manual steam wands to fully automated milk texturing and dispensing.
This flexibility empowers baristas and coffee businesses to determine how much control they want to retain versus how much they want to automate. A café can maintain hands-on milk steaming for greater artisanal input, or prioritize speed and consistency during peak service with full automation.
Eversys did more than introduce super automatic machines into specialty coffee; they redefined what automation could mean for quality-driven cafés. Through modular engineering, advanced extraction technology, and a highly adaptable product range, they bridged the gap between precision and efficiency.
In doing so, they challenged the long-held assumption that specialty coffee and automation could not coexist — and proved that, with the right engineering philosophy, they absolutely can.
