For our very first release, we knew we wanted to start at the origin of coffee itself: Ethiopia. Ethiopian coffees are renowned for their distinctive and recognizable flavor profiles, yet they remain incredibly approachable. That balance between uniqueness and accessibility made Ethiopia the natural choice for introducing our brand and our vision to the world.
During the sourcing process, our main focus was on finding an Ethiopian coffee with minimal bitterness and as much natural sweetness as possible. We carefully evaluated a wide range of samples through extensive cupping sessions, assessing each coffee across multiple roast levels. Our goal was to find a coffee that would remain expressive, balanced, and enjoyable regardless of how it was roasted.
Among all the samples, one natural processed coffee stood out immediately. From the very first cupping, it showed exceptional clarity, sweetness, and complexity. What truly set this coffee apart was its versatility: it performed beautifully at every roast level we tested, consistently delivering character without harshness.
At lighter roast levels, such as Nordburn and Rumjack, the sweeter elements take center stage. Expect vibrant, juicy notes and a clean, elegant cup that highlights the coffee’s natural sugars. As we move toward more developed roasts like Smooth Operator and Back In Black, the profile evolves, revealing more pronounced floral notes while maintaining balance and depth.
This coffee perfectly reflects what we aim to achieve through careful sourcing and precise cupping: coffees that are expressive, flexible, and a pleasure to drink. We are incredibly proud of this first release and see it as a strong foundation for everything that is yet to come.
